yummy yummy bread -- 2003-02-19 Anyone want to do an internet recipe exchange? I love to bake, and love to try new recipes. Here's one you can all try, it's wholesome, and so yummy you won't believe how fast it disappears! The recipe I'm giving out is my favorite homemade bread, Anadama Bread. In fact, I'm making some right now! It's a bread with a long history from pioneer days, and it tastes amazing with a hearty meal like stew or chili. ANADAMA BREAD Boiling water - 2 cups Cornmeal - 1/2 cupButter - 3 tbsp. Mild molasses - 1/2 cup Salt - 2 tsp. Warm water - 1/2 cup Granulated sugar - 1 tsp. Active dry yeast - 1 x 1/4 oz. (8 g.) All purpose flour - 2 cups All purpose flour, approx. - 4 and 1/2 cups Cornmeal - 1 tbsp. Butter - 2 tsp. Cornmeal - 1 tbsp. Gradually stir boiling water into first amount of cornmeal in large bowl. Add butter, molasses and salt. Stir well. Set aside to cool to lukewarm. Stir warm water and sugar together in small bowl. Sprinkle yeast over top. Let stand 10 minutes. Stir to dissolve yeast. Add to cornmeal mixture. Stir. Add first amount of flour. Beat on low to moisten. Beat on medium about 2 minutes. Work in enough remaining flour until dough pulls away from sides of bowl. Turn out onto floured surface. Knead 8-10 minutes until smooth and elastic. Place in greased bowl, turning once to grease top. Cover with tea towel. Let stand in oven with light on and door closed for 1 to 1 and 1/2 half hours until doubled in bulk. Turn out onto floured surface. Divide into 2 equal portions. Punch down dough. Shape into 2 loaves. Sprinkle bottoms of 2 greased 9x5x3 inch loaf pans with second amount of cornmeal. Cover with tea towel. Let stand in oven with light on and door closed for 30 to 45 minutes until doubled in size. Gently brush tops with melted butter. Sprinkle with third amount of cornmeal. Bake in 375 F degree oven for 30-45 minutes until bread sounds hollow when tapped on bottom of loaf. Turn out onto racks to cool. Makes 2 loaves. yummy! So, what's your recipe?
